Ruprecht was running three facilities in different locations: raw processing in Chicago, a cooking operation in Wheeling, and cold storage in Chicago. In 2008, they approached Keeley Construction to help them consolidate the three facilities into one state-of-the-art meat processing facility in Mundelein, IL. Starting the buildout in an existing 107,000 SF structure required removal of all the flooring, construction of the cooler, freezer, and production areas, and reinforcement of the roof.
Due to FDA and USDA regulations and food safety concerns, all aspects of the building had to be carefully planned. The space was created to accommodate a 45,000 SF freezer/cooler, as well as large processing equipment for cooking and packaging. With future growth in mind, Keeley Construction built the Ruprecht Meat Company’s process facility to be expandable, efficient, and modern.
Founded in 1860 in Chicago’s famous meatpacking district, Ruprecht offers nature-to-plate food solutions. As a division of Kilcoy Global Foods, Ruprecht serves customers across the food service, food manufacturing, and retail markets with high-quality raw proteins and sous vide, fully cooked and packaged foods.
